
Ingredients
Chicken:

900 grams (2 pounds) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
Marinade:

225 grams (8 ounces) light cream cheese, softened

1 egg
-
Juice of 1 lemon or lime
-
1 tablespoon homemade chipotle seasoning
Coating:

250 grams (2 cups) plain flour
-
2 tablespoons chipotle seasoning
-
1 tablespoon smoked paprika
-
1 tablespoon salt

125 mL (½ cup) skim milk

Marinate

In a large bowl, mix softened cream cheese, egg, lemon/lime juice, and 1 tablespoon chipotle seasoning. Use a hand mixer if desired.

Add chicken pieces, stir to coat, and marinate in the refrigerator for at least 30 minutes (or overnight for deeper flavour).

Coating

In a small plastic bag, combine flour, 2 tablespoons chipotle seasoning, paprika, and salt.

Breading

Preheat air fryer to 190°C (375°F).

Place a few marinated chicken pieces in the flour mixture, seal the bag, and shake to coat. Place on a parchment-lined baking sheet.

Repeat with all chicken pieces.

Air Frying

Arrange chicken pieces in a single layer in the air fryer basket. Spray well with olive oil.

Air fry for 8 minutes, flip, spray again, and air fry for an additional 5–7 minutes (adjust time based on your air fryer).
