-
2 tablespoons (30mL) olive oil

-
1 cup (240mL) vegetable broth
-
2 tablespoons (30mL) olive oil
-
1/4 cup (10g) chopped parsley
-
1/4 teaspoon (1g) garlic powder

Phase I
The Salmon
-
Cut salmon fillets into even sizes if needed. Optionally, remove the skin.
-
Rub fillets with garlic powder, paprika, salt, and pepper. Drizzle with olive oil and massage spices into the salmon for maximum flavour.
-
Preheat the air fryer to 200 degrees Celsius (400 F). Place the salmon fillets inside and cook for 7–9 minutes, depending on thickness. The salmon is done when it flakes easily.
Phase II
The Couscous
-
Bring the vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes.
-
Fluff with a fork and stir in olive oil, parsley, garlic powder, salt, and pepper.

Phase III
The Salad
-
Toss greens, cherry tomatoes, red onion, and cucumber in a large bowl.
-
Whisk olive oil, lemon juice, salt, and pepper together. Drizzle over salad and toss to combine.
Phase IV
Enjoy
Serve the salmon with the salad and herbed couscous for a complete meal!
