1 cup uncooked chickpeas (soaked 24 hours, drained)

½ cup chopped shallot or onion

3 garlic cloves

1 teaspoon lemon zest

1 teaspoon ground cumin

1 teaspoon ground coriander

¾ teaspoon sea salt

¼ teaspoon cayenne pepper

¼ teaspoon baking powder

1 cup chopped fresh cilantro

1 cup chopped fresh parsley

Prepare

Preheat to 200°C (400°F) and line a baking sheet with baking paper.

Falafel mixture

In a food processor, blend chickpeas, shallot, garlic, lemon zest, cumin, coriander, salt, cayenne, baking powder, cilantro, parsley, and olive oil until well combined but not pureed.

The patties

Form 12-15 patties (about 2 tablespoons each). If they don't hold, pulse the mixture again.

Bake

Place patties on the sheet, drizzle with olive oil.

Bake for 14 minutes, flip, then bake for another 10-12 minutes until golden and crispy.
