Ingredients

  • 1 cup uncooked chickpeas (soaked 24 hours, drained)

  • ½ cup chopped shallot or onion

  • 3 garlic cloves

  • 1 teaspoon lemon zest

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • ¾ teaspoon sea salt

  • ¼ teaspoon cayenne pepper

  • ¼ teaspoon baking powder

  • 1 cup chopped fresh cilantro

  • 1 cup chopped fresh parsley

  • 1 tablespoon olive oil

Prepare

  1. Preheat to 200°C (400°F) and line a baking sheet with baking paper.

Falafel mixture

  1. In a food processor, blend chickpeas, shallot, garlic, lemon zest, cumin, coriander, salt, cayenne, baking powder, cilantro, parsley, and olive oil until well combined but not pureed.

The patties

  1. Form 12-15 patties (about 2 tablespoons each). If they don't hold, pulse the mixture again.

Bake

  1. Place patties on the sheet, drizzle with olive oil.

  2. Bake for 14 minutes, flip, then bake for another 10-12 minutes until golden and crispy.
