Melted butter (for greasing)

265g (1 3/4 cups) self-raising flour

40g (1/4 cup) plain flour

1 teaspoon ground cinnamon

140g (2/3 cup, firmly packed) brown sugar

2 overripe medium bananas (mashed)

2 eggs (lightly whisked)

125ml (1/2 cup) skim milk

50g butter (melted and cooled)

Preparing

Preheat oven to 180°C (350°F). Grease an 11 x 21cm loaf pan with melted butter and line the base and two opposite sides with non-stick baking paper, leaving an overhang for easy removal.

Sift the self-raising flour, plain flour, and cinnamon into a large bowl. Stir in the brown sugar. Create a well in the center of the mixture.

In a medium bowl, mash the bananas. Add the eggs, milk, and melted butter, then stir until well combined.

Pour the banana mixture into the well of the dry ingredients.

Stir gently until just combined, do not overmix.

Spoon the batter into the prepared pan and smooth the surface.

Baking the banana bread

Bake for 45-50 minutes or until a skewer inserted in the centre comes out clean.

Remove from the oven and let it sit in the pan for 5 minutes. Transfer to a wire rack to cool completely.
