
Ingredients

4 boneless, skinless chicken breasts, cut into 1 ½-inch cubes

3 cloves garlic, minced (1 clove for tzatziki)

2 teaspoons dried oregano

1 teaspoon dried parsley

1 teaspoon salt (¼ teaspoon for tzatziki)

½ teaspoon freshly ground black pepper

½ cup finely grated cucumber

1 cup thick whole milk Greek yogurt

½ tablespoon extra-virgin olive oil

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh dill

Marinate Chicken

In a large mixing bowl, combine the chicken, olive oil, lemon juice, garlic, oregano, parsley, salt, and pepper. Stir to coat the chicken evenly.

Cover and refrigerate for at least 30 minutes to marinate.

Prepare Tzatziki

Place the cucumber on a towel and gently squeeze out excess water.

In a medium bowl, combine the cucumber, Greek yogurt, lemon juice, olive oil, garlic, salt, and dill. Mix well.

Cover and chill until ready to serve.

Heat the grill to medium-high heat.

Thread the marinated chicken onto skewers, about 8–9 pieces per skewer, to make 6 skewers.

Grill the chicken skewers for 3–4 minutes on each side until cooked through and lightly charred.
