Ingredients

150 g plain flour

1 teaspoon caster sugar

3 teaspoons baking powder
-
1 pinch salt
-
180 ml milk
-
1 egg (55g)
-
20 g unsalted butter melted
-
Extra butter for frying

Prepare the batter

Sift flour, sugar, baking powder, and salt into a bowl.

Gradually whisk in milk, egg, and melted butter.

Cooking Blinis

Heat a frying pan over medium-high heat.

Add butter to the pan and drop heaped teaspoons of the mixture (about 10 ml each).

Cook until browned underneath and bubbles appear. Flip and cook through.

Repeat cooking the blinis until the mixture is used up.

Clean the pan with a paper towel if butter burns between batches.

Serve

Serve the blinis warm, with your choice of toppings.
